Nectarine Crumble

This is such a classic dessert. I don't usually set out to make it per se, it is usually when we buy a basket of some fruit and they start to ripen too quickly. It's a good way to use up peaches, nectarine, apples, and anything else similar. I'm not sure if this is a "Crisp" or a "Crumble" - some say they are the same thing. It's definitely not a "cobbler".

You start with almost any fruit - peaches work really well, and apples is a classic. Also, any baking spice will work. I like to go easy on the cinnamon and heavy on the nutmeg.

We like ours with lots of crumble topping - and it has to have oats in it.

A little vanilla ice cream completes the package.

Skillet Chicken with Cilantro and Lime

This dish blew my socks off. We had some boneless chicken thighs hanging around in the freezer, and needed a summer Mediterranean type recipe to spice it up. This is so full of flavour, a bit spicy and that wonderful cilantro!  Paired it up with a bit of sliced cucumber and (should have been yogurt but we only had sour cream on hand) to temper the heat a bit. Served on rice.

Mediterranean Orzo with tomatoes

This dish was delicious, but to be honest I don't remember much else. I had added this recipe as a draft post 4 months ago and only decided to resurrect it now. That is store bought calamari on the plate, just ignore that.
