Nectarine Crumble

This is such a classic dessert. I don't usually set out to make it per se, it is usually when we buy a basket of some fruit and they start to ripen too quickly. It's a good way to use up peaches, nectarine, apples, and anything else similar. I'm not sure if this is a "Crisp" or a "Crumble" - some say they are the same thing. It's definitely not a "cobbler".

You start with almost any fruit - peaches work really well, and apples is a classic. Also, any baking spice will work. I like to go easy on the cinnamon and heavy on the nutmeg.

We like ours with lots of crumble topping - and it has to have oats in it.

A little vanilla ice cream completes the package.

Nectarine Crumble
Ingredients

  • 7 or 8 nectarines, cut around the pit and into thin'ish slices
  • 1/4 cup sugar
  • 2 Tb flour
  • juice of half a lemon, plus some zest if desired
  • 1/2 tsp of cinnamon and/or nutmeg
  • 1/4 tsp ground ginger
  • 1 cup flour
  • 1 cup oats
  • 1 cup brown sugar
  • 1 stick of unsalted butter, sliced into little pieces.
  • another 1/2 tsp of cinnamon and/or nutmeg
Method
  1. Depending on how many nectarines you end up using, you can use either an 8x8 baking dish or a larger 8 x 12. I used a glass 8x8 dish.
  2. In a medium bowl, combine the nectarine slices, 1/4 cup sugar, 2 Tb flour, lemon juice and zest, and spices. Pour into the baking dish.
  3. In a separate bowl (you can also try a food processor for this), combine the 1 cup of flour, oats, and brown sugar. Cut in the butter until evenly distributed. Pour over the nectarines.
  4. Bake in a 375 degree oven for 30 to 45 minutes - watch for browned crumble.
