Almost Vegan Black Bean Soup
Ingredients
- splash of canola
- red onion, diced
- 1 Tb crushed cumin seeds
- 3 cups vegetable or chicken broth, home made if you can
- a large can of rinsed black beans
- squirt of your fav hot sauce, or even chopped chilies if you like
- 1/2 cup chopped cilantro, and a bit more for garnish
- a blob of sour cream for each bowl, if desired
- some lightly crushed Doritos, or something similar for crunch
- salt & pepper to taste
Method
- Heat the oil, cook the onion for a couple minutes in a sufficiently large pot. Add the cumin seeds, cook a bit more.
- Add the beans and broth, simmer covered for 5 minutes.
- Blend in the pot, then mix in the cilantro, hot sauce, salt & pepper.
- Serve in bowls, garnish with sour cream, Doritos, and a bit more cilantro.
